Harvesting is done in the traditional way and picking the olives is carefully planned and executed from early October onwards. Olives are transported to the mill immediately and the pressing takes place on the same day at very low temperatures, with the so-called cold pressing method. This ensures that all nutritional elements, acidity and taste remain unaltered.
Olive oil is the basis of the renowned Cretan diet. With many applications; as a starter with bread and salts, ideal for salads, cold dishes, sauces and on the BBQ, raw on the meat after cooking gives this extra flavor; brings the Mediterranean experience to our dinner table throughout the year.
